Wakey wakey campers Its a beautiful morning and whether your locked down or free as a bird, its time to rise and shine, get some tasty ass food and put it directly into your face hole. Breakfast today in the form of a soft fluffy vegan brioche bun, stuffed with smokey chipotle fried mushrooms (deets below) and crispy hash browns......slathered seductively in tangy brown sauce.....all together now.......ooooooooooosh ... Also, may or may not have added a side of avo to this.....you know, for health For the shrooms I slice them reasonably thinly then sautee them in a splash of olive oil, a good glug of soy sauce, garlic powder, black pepper, smoked paprika and chipotle flakes for some punch
Now I don't say this lightly, and yes you may have heard this before from me but.........this is THE BEST PIZZA I HAVE EVER HAD!!!! Holy hell fires guys, I'd eat this whole damn thing again right now as it was So sitting atop this glorious chewy sourdough base were mountains of mushrooms, grilled artichokes, vegan ricotta, tamari roasted pumpkin seeds, chilli flakes and some truffle mayo drizzle. It was amazing.... We also shared a lush cheesy garlic bread, drool worthy. Highly recommend heading to the @the_greengrocers if you're in Norwich, you won't regret it!!
Chocolate and PB breakfast cookies Yes thats right, this pile of chocolate goodness is all for me, mwah ha ha.......... OK, so perhaps not as I do actually need to be able to fit through my the front door at some point!... These is my 3 ingredient master recipe (if you can call it that) from my website, with some added extras because, well I'm feeling extra In to the base ingredient of oats, PB and mashed bananas I added 4 tbsp cocoa powder, 1/4 cup of dessicated coconut , 1/4 cup ground almonds, 2 scoops of @gorillajuice_nutrition matcha protein powder, a splash of oat milk as the powder made it a little dryer than normal, and 2 tbsp of maple syrup.....mash it up then form into cookie shapes on non stick baking sheets and in for an oven at 180 for 20 mins.
Rich, sexy and a very nice mouthful.............the end. Of COURSE that's not the end, crying out loud how mean do you think I am hey?! Actually don't answer that . So anyway, before I go off on a mega tangent (nope, too late!) this creamy dreamy, rich and sexy (drooling yet) number is my remixed mushroom stroganoff from last night featuring some @richmond_foods sausages (oh yes I did) and some chopped leeks.... The sauce is incredibly creamy but guess what......its just soy milk guys, oh yeah here's me bringing the flavour but none of the guilt! Here's what I did for 4 generous portions, buckle up bishes. 1/2 a chopped onion 250g chopped shrooms 2 large cloves of garlic, crushed 1 pack of @richmond_foods sausages, de-skinned and chopped 2 leeks, sliced down the middle then chopped Sautee the above in 2 tbsp olive oil until the onions and leeks are translucent, then go in with 2 tbsp dijon mustard 2 veg stock cubes 2 tbsp smoked paprika 1 tsp cracked black pepper 200ml soy milk (oat would be good too) 1 lemon, zest and juice 1 tbsp fresh thyme leaves (dried would be fine but only use 1tsp instead) Reduce the sauce down until its nice and thick then stir in a chopped handful of fresh parsley and serve up with rice......ooooooooooosh.

Now for something a bit different, my no egg breakfast muffins Yep I know I know, where is the massive bowl of oats or frozen nice cream I hear you say, well Susan I fancied a switcheroo, mkay?! This is kinda like a frittata, but no egg, no cholesterol, super high protein and with lots of veggies in there so you can spring into your day feeling virtuous, even if deep down you know you're a bad gal.........not that I'm talking about myself of course .... Bit of an experiment yesterday and still a little way to go on the flavours before I post up my recipe but texturally they were great and will be perfect for meal prep (if you can stop yourself from eating 6 of them warm out of the oven with a massive splodge of brown sauce ) so watch this space.
Introducing the mouthful that is Christina.........and ooh she dirrrrty If you haven't gauged by now I'm referring to Christina Aguilera and her track called 'Dirty' featuring Redman.....and if you don't know the track or who Redman is then kindly show yourself the door So, the husband and I were procrastinating over some tequila (oh yeah, Friday night....ya bish) about what vegan burger/pizza/takeaway to order tonight then it struck me, we have vegan burgers, cheese, bu...ns, a host of condiments and a frickin grill....then the magic happened. No not that magic, that was earlier . So here we have 4 @sainsburys plant pioneer burgers grilled with @mexicanacheese melted on to each patty then I slathered the buns in @hellmannsmayonnaise vegan mayo and squidged @rocketshipsauces supernova chilli sauce, tomato and jalapeno relish and American mustard in-between each layer.....damn this baby was a mouthful....ooooooooooosh.

SPICY FAJITA BOWL Love this sort of dinner, each component has its own great taste but then mix them all together and BAM , sexy time. So I've decided that I'm never buying vegan mince again, I've started using dried tvp (textured vegetable protein, or dried soy mince basically) and it's so versatile and easy to use plus it soaks up flavour like a boss!... In my bowl I had smokey ground tempeh and rehydrated tvp cooked in a pan with @oxo beef stock (now meat free!), smoked paprika, chipotle flakes, cumin, liquid smoke, garlic and onion powders, soy sauce, tomato puree, a squidge of ketchup. Served with rice which I cooked in veg stock, corn which I par boiled, seasoned then blast charred in my @ninjakitchenuk then a quick limey guacamole and a spicy salsa which I heated up with @rocketshipsauces
When you get WAY to excited with the portion size...............of your dinner........ Homemade beefy tasting nutroast thing for dinner last night with a mountain of mash, thyme and maple roasted carrots and steamed broccoli......ooh and oh yeah a huge pool of thick herby gravy
Ooooooooph Damn @olivesofnorwich you guys put together a good vegan breakfast! Thank you so much, sincerely from my belly Vegan black pudding, tempeh bacon, chickpea scramble, beans, grilled peppers, shrooms and tomato and oh what's that there.....yes its bubble and squeak ... Love this place and highly recommend a visit if you're in Norwich (which by the way has lots of amazing vegan eateries!)
